Should you play the original campaigns before jumping into SC2? You could, but you really don't have to, there's plenty of recap of the story so that someone who doesn't know the lore can jump in. So if you want to play the campaign with a Starcraft 2 engine you can do that! (Going 3rd person shooter in Terran mission 4 for example)
There are modded campaigns transferred over from SC:R to SC2 Those include all of the original voice work, maps and mission layouts with a couple of creative changes to a few of the more boring missions. If you're asking about the SC:R campaign, well you don't neccessarily HAVE to purchase Remastered to experience it. Which one you like more is entirely a subjective thing but both are very competitive and hard to get into if you want to compete. They are very different from one another in how they play. I'm not sure I've even played a game like Starcraft before, but I'm really interested in trying it out. I had never played any of the Diablo games when I played Diablo 3, but I understood fine and really enjoyed it.
